Yay! It’s Friday people! This nice weather has me itching to do anything that isn’t work. Whoops. What are everyone’s big plans for this weekend? I am actually off this weekend and heading back come to PA and couldn’t be more excited. I’ll be hanging out with family and friends, hopefully spending a good amount of time outside and heck, I might even head to the races tonight. My Aunt is visiting from Florida so I’ll probably be spending most of my time with her, my Grammy and of course my mom. My sister will be hosting our family for the first time at her house for a “holiday” so I’m excited for that. Hopefully, I will be able to relax a little bit, but knowing me that won’t happen. I will most likely be out and about all weekend.
So, I finally am getting into this season of Mad Men. It was a really slow start and took me awhile to get into it but this past weeks episode was really good. I’m actually really loving the fashion that is emerging, even though I was so sad to see the 50’s/60’s fashion make an exit. This series has been my favorite since it has been on and I’m really sad to see it go. Same kind of goes for Game of Thrones. This week was very exciting and I’m looking forward to see where the story line goes. I also just picked up the new book that we are reading for book club, Lush Life by Richard Price. We read Girl on the Train last month and it was soooooo good I zipped right through it. What is everyone watching/reading right now?
Let’s talk about this chicken. It’s quick. It’s easy. It’s elegant. It’s versatile. This can be whipped up in about an hour so that makes it quick enough for a weekday meal and it’s not very hands on so you can go about your business while this is cooking. You can really put any herbs or seasonings that you have on hand. A good bonus is that it makes this really delicious broth that you could do alot of things with. You could make a gravy or some sort of sauce, you could make a soup or you could just save it to add to stuff later. I hope you enjoy this very quick, easy recipe. This could be a great addition to your mother’s day dinner. wink. wink.

- 4 chicken leg quarter
- 1 cup chicken broth
- 1 lemon, sliced
- smoked paprika, to taste
- salt and pepper, to taste
- a few sprigs of fresh oregano
- 2 tbsp EVOO
- Preheat oven to 325 degrees. Lay lemon slices on bottom of a large baking dish and put chicken leg quarters on top. Season with salt, pepper and paprika. Add fresh oregano and drizzle with the EVOO. Bake for 45 minutes or until the thermometer reads 165 degrees. Put under a hot broiler for about 3 minutes until skin in crispy and golden.
